Bittered with Heather Tips in the boil, and flavored with fresh rosemary, cinnamon sticks, and elderberries in the fermenter. This is more of an ancient or foraged beer style bittered and flavored without hops. We aged this beer in absinthe and wine barrels for a few months, then bottle conditioned with a neutral yeast to avoid adding any additional character during bottle fermentation. This is a one of a kind beer that blew us away – the aroma is very different than what you taste.
