Saison with mace and black tea

We are so excited about Chayakada!!!!

Chayakada, which means “tea shop,” is a collaboration with Thattu Restaurant here in Chicago. Using our saison base, we added mace, which is derived from the reddish seed covering of nutmeg. Traditionally used in baking in the West, mace adds a subtle, aromatic quality to our funky base. We also added traditional Indian black tea which gives an earthy depth.

The drink celebrates the omnipresent tea shops in Kerala, where locals congregate, read newspapers and talk politics and local affairs. Chayakadas are everywhere in busy cities. There is an old joke among Indians that when Neil Armstrong landed on the moon he was greeted by a Malayali making tea!
